VANILLA WAFERS


1/4 cup powdered sugar
1/4 cup sugar
1/4 cup tolerated oil (I use expeller-pressed canola oil)
1 egg or egg substitute (I use 1 T. ground flaxseed mixed with 1/4 cup hot water when I don't use egg.)
1 1/4 teaspoons vanilla
1 3/4 cups GF flour mix (sample mixture: 1 cup brown rice flour, 1/2 cup white rice flour, 1/4 cup potato starch or tapioca starch)
1 1/2 teaspoons baking powder
1 tablespoon water

Preheat oven to 325 degrees.

Cream together sugars, oil, egg and vanilla in a large bowl. Add the flour and baking powder. Add 1 tablespoon of water and continue mixing until dough starts to form together. Roll dough into 3/4 inch balls and flatten slightly (I use my fingers) onto a lightly greased or Teflon cookie sheet.

Bake for 15 - 18 minutes or until cookies are light brown.
