PUMPKIN BARS
4 eggs
1 1/2 Cups sugar
1 1/2 Cups tolerated oil
1/2 Cup applesauce
16 oz. Canned pumpkin
1/2 Cup brown rice flour
1/2 Cup white rice flour
1 tsp. Salt
1 tsp. Baking powder
1 1/2 tsp. Cinnamon (or to taste)
1 1/2 tsp. Nutmeg (or to taste)
1 tsp. Xanthan gum
3/4 Chopped nuts (optional)
3/4 Cup raisins or currants
Beat eggs, sugar, oil, applesauce and pumpkin until fluffy. Add raisins or currents and mix well. Add the dry ingredients. Mix well and spread batter in a 15" x 10" bar pan. Bake at 350 degrees for 25-30 minutes.
