POTATO COOKIES


1/2 cup GF/CF margarine or allowable oil
1 cup brown rice flour
1/4 cup white rice flour
1/4 cup potato starch or tapioca starch
1 egg or flaxseed egg substitute (1 T flaxseed ground and mixed with 1/4 cup water)
1 1/2 teaspoons vanilla
1 1/4 cups potato flakes
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon xanthan gum
1/2 - 1 teaspoon cinnamon

Preheat oven to 350 degrees.

Cream together margarine or oil, sugar, egg or egg substitute and vanilla. Add flour, baking powder and xanthan gum. Mix well. Fold in potato flakes. Drop by teaspoon on lightly greased cookie sheet and bake for 12 minutes, or until lightly browned.
