DATE NUT BREAD


3/4 Cup hot water
1/2 Cup pitted dates, chopped
1/2 Cup golden raisins
1 Cup shredded carrots
1/2 Cup coarsely chopped walnuts
3 T. vegetable oil
2 Large eggs
1 Large egg white
2 Cups GF flour blend
2 Teaspoons xanthan gum
3/4 Cup sugar
1 Tablespoon baking powder
1 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
Cooking spray or oil

Preheat oven to 350 degrees. Combine water, dates, and raisins in a bowl; let stand 15 minutes. Stir in carrots, walnuts, oil, eggs, and egg white. Combine flour, sugar, baking powder, cinnamon, and salt in a large bowl. Add carrot mixture to flour mixture, stirring just until moist. Spoon batter into an 8 x 4 inch loaf pan coated with cooking spray or oil. Bake for 1 hour or until a wooden pick inserted in center comes out clean. Cook 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
