CHOCOLATE PUDDING


1/4 cup unsweetened cocoa powder
1/4 cup granulated sugar
2 tablespoons potato starch
2 cups Vance's DariFree Milk
1 egg, beaten
1/4 teaspoon vanilla

In a medium saucepan, blend cocoa, sugar, potato starch and milk. Cook over medium heat, stirring constantly, until mixture comes to a boil and begins to thicken.

Remove from heat. Mix 1/4 cup of the mixture with beaten egg.

Gradually stir egg mixture into hot mixture.

Cook over low heat, stirring constantly, 5 - 10 minutes, or until mixture comes to a boil.

Remove from heat. Stir in vanilla.

Pour into custard cups or serving dish. Chill well.

If left in refrigerator overnight, this will separate; simply stir together - the taste is no different.
