ALMOND BUTTER BARS


Preheat oven to 350 degrees.

2 eggs
1/4 cup creamy almond butter
1 stick GF/CF margarine
1 1/2 teaspoon vanilla
3/4 cup sugar
1 1/2 cup brown rice flour (A mixture of brown rice flour and white rice flour works well.)
1 1/2 teaspoon baking powder
1 teaspoon xanthan gum
1/8 teaspoon salt
Mix eggs, almond butter, margarine, vanilla, and sugar well. Mix all dry ingredients in a separate bowl. Mix all ingredients together.

Bake in greased pie plate, quiche plate, or square pan at 350 degrees until knife inserted comes out clean (approximately 20 minutes).

Cool completely before cutting.
